Coconut and Chocolate Ice Cream
We like to use what comes through the door or what we’ve found harvesting and create special desserts.
This is one of my favorites on a summer day!
Still use the simple household ice cream maker. Cook half a gallon of fresh coconut and coconut milk together with 1/4 cup sugar and a splash of vanilla. Cook until the sugar is well mixed and disappears into the milk. remove from heat immediately. Add half a gallon of cold coconut milk. Mix and slowly pour into ice cream maker as it’s rotating. Once it starts to harden and thicken (about an hour), swirl in cold organic chocolate syrup. Remove and immediately place in freezer. Let the ice cream harden up for an hour. Serve with a favorite cookie, stay tuned for cookie recipes at a later date.
